This recipe comes from "The Ultimate Encyclopedia of Chocolate." As you might imagine, they are not as rich as regular brownies -- but if you are serving a crowd that's trying to cut back on sugar and fat, these are a decent substitute.
5 tablespoons low-fat cocoa powder
1 tablespoon sugar
5 tablespoons skim milk
3 large bananas, pureed
1 cup light brown sugar
1 teaspoon pure vanilla extract
5 large egg whites
3/4 cup self-rising flour
3/4 cup oat bran
1 tablespoon confectioners' sugar, for dusting
Preheat oven to 350 degrees and set oven rack at upper middle level. Line an 8-inch square cake pan with baking parchment. Blend the cocoa powder, sugar, and skim milk together in a bowl. Add the bananas, brown sugar, and vanilla.
In a separate mixing bowl, lightly beat the egg whites with a fork. Add the chocolate mixture and continue to beat. Sift the flour over the mixture and fold in with the oat bran. Pour batter into prepared pan.
Bake on upper middle oven rack at 350 degrees for 30 to 35 minutes, or until top is firm and crusty. Cool in the pan before cutting into squares. Lightly dust the brownies with confectioners' sugar before serving. Makes 1 dozen bars.
