Marinated Pork Rind Salad
2 avocados, chopped into small pieces 2 or 3 canned jalapenos, diced, and half of their juice Juice of 2 lemons 1 cup cold pork skins, cut into small pieces Salt to taste
Cut pork skins (available from a butcher) and refrigerate. Combine all other ingredients, but do not mash avocado pieces. Add pork skins cold.
Serves 5 or 6 people.
