This is simple and delicious and makes wonderful use of the tomatoes you may have growing in the garden right now. Serve this with some fresh, crusty bread and extra-virgin olive oil for dipping.
1 bag salad containing crisp lettuces of your choice, rinsed and dried
6 medium ripe tomatoes, coarsely chopped
Zest of 1 lemon, minced
1 to 2 teaspoons fresh herbs, minced (oregano is excellent in this salad)
Simple vinaigrette (see recipe)
Divide the salad greens evenly among 4 plates. Repeat with chopped tomatoes. Sprinkle each salad with lemon zest and fresh minced herbs.
Lightly dress each salad with vinaigrette and serve. Serves 4.
