Hake Fillet Tomato Basil
4 pounds whiting (fillets of 6 to 8 ounces each) 6 medium tomatoes, diced 8 to 10 fresh basil leaves, chopped 4 garlic cloves, minced 1/4 teaspoon black pepper 1 teaspoon salt 1/2 teaspoon oregano 2 tablespoons olive oil Red pepper, crushed, to taste
Heat olive oil. Saute minced garlic in oil until the garlic softens. Add tomatoes, basil, salt, pepper, oregano and red pepper. Simmer for 5 to 7 minutes.
Preheat oven to 350 degrees. Rinse whiting fillets in cold water and pat dry. Arrange fillets in baking dish, and pour tomato basil sauce over the fish. Bake until fish flakes easily, approximately 15 to 20 minutes.
Serves 6 to 8. (We found this to be a lot of fish.)
