Orange Pineapple Marmalade
2 oranges, quartered, seeded 1 (15-ounce) can crushed pineapple, drained 4 cups sugar 2 tablespoons lemon juice
Place the oranges in a food-processor container; process until ground. Combine the crushed pineapple, sugar, lemon juice and oranges in a deep microwave-safe 2 1/2-quart dish; stir to mix well. Microwave on high for 10 minutes or until the mixture boils, stirring after 6 minutes. Microwave for 3 minutes longer after it starts to boil. Makes 32 servings.
