Peanut Butter Ice Cream Sandwiches

1/2 cup butter
1/2 cup peanut butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1/2 teaspoon vanilla
1 1/4 cups flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1 cup sugar
1 pint vanilla ice cream, slightly softened
1 package mini chocolate chips

Mix first nine ingredients in a bowl. Roll into balls and dip into 1 cup of sugar. Place on ungreased cookie sheets.

Bake at 350 degrees for 9 to 11 minutes. Remove to wire racks to cool. For each sandwich, press 1 slightly rounded tablespoon of ice cream between two cookies. Roll the cookie sandwich along sides with chocolate chips. Place on jellyroll pan and freeze until firm.
