2 medium potatoes equal 1 pound
Potatoes should be even in size and shape. After scrubbing, pierce the skins to allow steam to escape. Arrange potatoes 1 inch apart in a circle on the bottom of the oven and cook on high, rotating 1/4 turn halfway through cooking time, following time table or 6 to 7 minutes per pound:
1 medium, 3 to 4 minutes
2 medium, 5 to 6 minutes
4 medium, 7 to 8 minutes
6 medium, 8 to 9 minutes
For convenience, potatoes may be placed on a dish or rack and rotated halfway through the cooking time. Remove potatoes from microwave when fork comes out with a little resistance. Let sit 5 minutes, and test again for doneness.
Note: Potatoes may be turned over when rotating to prevent becoming "soggy" on the bottom. Do not cook the potato on a napkin or paper towel because of the danger of overcooking. There may be too much heat transfer from the potato to the paper.
