Southwestern Chicken

Dennis said he likes to cook "a lot," even though he's rather new to it. He certainly has a natural talent. One night he asked his mom if he could do some experimenting and came up with this blend of flavors that transforms chicken from dull to delicious. His recipe is for one serving, but we cooked enough for six because that's how many we had at dinner on Recipe Test Night.

However, this would be a terrific dish for older children to prepare if they had to fix their own dinner. It's much better than something canned or frozen. We served it according to Dennis' directions, complete with sour cream and green onions for the grown-ups, and the presentation was as impressive as the taste.

Best of all, it only took about 20 minutes from start to finish. Our accompaniments were tortilla chips, cut-up vegetables and dip.

1 boneless chicken breast
1 tablespoon taco seasoning mix
1/2 cup salsa
1/2 cup nacho cheese sauce or salsa con queso
1 teaspoon sour cream (optional)
1/2 teaspoon chopped green onion tops (optional)

Sprinkle chicken with taco seasoning mix, then broil or grill until done (we grilled). Put salsa on plate, then set chicken on top. Heat cheese sauce in microwave on high for 1 minute or until bubbly. Pour over chicken. Top with sour cream and green onions if desired. Makes 1 serving.
