Key West Pineapple Relish
The spirit of Hemingway is alive in Key West with the Original Sloppy Joe's on Green Street, the "new" Sloppy Joe's on Duval Street and the Hemingway house at 907 Whitehead St. This golden relish reminds one of a day spent in Papa's paradise. It was intended to be served at the Carnegie event with one of the entrees, baked ham, but the tasting committee found it equally delicious with vanilla ice cream.
One 4-pound firm, ripe pineapple, peeled, cored and coarsely chopped 2 cups sugar 1 1/2 cups tarragon vinegar 2 2-inch pieces stick cinnamon, coarsely crushed and wrapped in cheesecloth with 2 teaspoons whole cloves
Combine all ingredients in a 2- to 3-quart non-reactive saucepan and bring to a boil, stirring with a wooden spoon to dissolve the sugar. Reduce the heat to moderate and, stirring from time to time, cook uncovered for about 30 minutes or until pineapple is translucent and mixture is thick enough to hold its shape. Discard spices and ladle into sterilized jars or serve immediately. Makes 2 cups.
