Artichoke Appetizer

1 cup Swiss cheese, freshly grated
1/2 cup Asiago cheese, freshly grated
1/2 cup Romano cheese, freshly grated
2 cups mayonnaise
1 1/2 teaspoons rehydrated onion
1 jar artichokes, drained and chopped (we used 14-ounce can of unmarinated artichokes)

Pepper to taste

Combine all ingredients and bake in casserole at 350 degrees for 30 minutes. Serve with fancy crackers.
