Standard Chai
2 cups water 2 teaspoons loose blacktea (Indian preferred) 1/4 teaspoon tea masala 2 cardamom pods 2 teaspoons sugar, divided 1/2 cup of milk 1 tablespoon peeled, sliced fresh ginger
Combine, water, tea, masala, cardamom, 1 teaspoon of the sugar and simmer 5 minutes. Add milk and the rest of the sugar. Add ginger when the mixture comes back to a simmer. In 15 seconds, strain into 2 cups.
Variation:Instead of the masala, use your own spices -- 2 cardamom pods, 1 cinnamon stick, 2 whole cloves, 2 black peppercorns (optional). Prepare as above, adding the ginger when the mixture returns to a simmer.
