1 small tube buttermilk biscuit dough
1 large sweet potato, baked
1/4 cup brown sugar
2 tablespoons melted margarine
1/4 cup sugar mixed with 1 teaspoon cinnamon
Separate and flatten the biscuits like a mini-pizza.
Scoop the pulp out of the baked potato. Add margarine and brown sugar to the pulp and mix well. Put 1 to 2 tablespoons on half of the flattened biscuit. Fold over the other half of the biscuit. Seal with the tines of a fork.
Roll in sugar/cinnamon mixture. Bake at 400 degrees for 12 minutes. Cool (the center will be hot).
