10 uncooked chicken tenders
1/2 recipe Caribbean Satay Sauce
10 wooden shish kebab sticks
Soak shish kebab sticks in water for 15 minutes.
Thread tenders onto sticks. (The tenders can be in one long piece, or cut up into bite-size pieces.)
To precook chicken, put shish kebabs in a glass dish with a little water in the bottom, cover dish loosely with wax paper and microwave for about 8 to 10 minutes, turning a quarter turn every 2 minutes or so. The chicken is done when the juices run clear. Do not overcook.
To finish the satay, brush all sides of the chicken with Satay Sauce (our sauce was quite thick), and grill until light brown. (We used our top-of-the-range grill pan, but you could use a frying pan or broiler pan in the oven.) Turn over. This is only takes a couple of minutes per side.
