A classic beloved by all and easy to make.
1/2 cup diced purple onion
2 cloves garlic, finely minced
4 cups plum tomatoes, chopped into 1/4 -inch cubes
4 serrano chiles, seeded and finely chopped
4 tablespoons chopped cilantro
1 tablespoon sugar
1 tablespoon red wine vinegar
2 to 3 teaspoons salt, to taste
Juice of 1 lime
Combine ingredients and serve at room temperature. Make the salsa within a few hours of use.
