8 to 10 tart apples, skin left on, seeded and cut into chunks
1 cinnamon stick
2 cloves
1 2-inch piece vanilla bean (this can be rinsed and reused over and over)
Grated rind of 1 large lemon
Juice of 1/2 large lemon
1/2 to 3/4 cup granulated sugar, more or less to taste, depending on tartness of apples
Combine all ingredients in a large pot. Cover and cook at an active simmer until apples are soft and sauce-like. Serve warm or cold. Makes 10 servings.
Note: Sendall likes to squeeze the lemon juice through his hands to "catch the seeds, clean the hands, clean the jewelry."
