Chocolate Chip Soynut Cookies

1 1/2 cups light brown sugar, firmly packed
1 cup vegetable shortening or margarine
2 large eggs
1 1/2 cups flour
1/2 cup GNC Soy Baking Mix
1/2 teaspoon salt
1 teaspoon baking soda
1 tablespoon vanilla soymilk
1 teaspoon vanilla
1 cup GeniSoy Soy Nuts, chopped
2 cups semisweet chocolate morsels

Preheat oven to 375 degrees.

In a large bowl, beat shortening and sugar. Add eggs one at a time, beating well after each addition.

Mix in baking soda, salt and GNC Soy Baking Mix. Add flour gradually along with soy milk and vanilla. Stir in Soy Nuts and chocolate morsels.

Drop by rounded teaspoons onto ungreased baking sheets.

Bake for 8 to 10 minutes or until golden brown. Cool 1 minute, and remove to wire rack to cool completely.

Makes more than 5 dozen cookies.
