2 8-inch flour tortillas
2 tablespoons olive oil
Coarse salt
Preheat broiler. Cut each tortilla into 8 wedges, and lightly brush both sides with oil. Arrange on a jellyroll pan. Broil, flipping once when they begin to brown. When brown on both sides, remove and lightly sprinkle with salt.
Variations:
Parmesan chips: Instead of salt, sprinkle with 1 to 2 teaspoons grated Parmesan cheese.
Garlic chips: Crush 1 clove of garlic, and add to oil before brushing on tortillas.
Herb tortillas: Add 1 tablespoon chopped fresh herbs to the oil, then brush on tortillas.
Tester's note: This recipe is for one serving. We used 10 8-inch tortillas, about 1/4 cup of olive oil, and tried some with each of the variations. All were tasty.
