1 cup finely diced tomatoes
1 cup finely diced red onion
1/2 cup fresh coriander leaves (cilantro) and tender stems
1 to 2 teaspoons chopped green chiles
1 tablespoon lemon juice
1/2 teaspoon salt
Put all the ingredients in a bowl, toss well to mix, and serve. This relish can be prepared ahead and refrigerated for up to one day. Serves 4.
