1/2 cup each: basil, oregano, thyme and rosemary, firmly packed
4 to 6 cloves garlic, sliced
3 1/3 cups red wine vinegar
Pack everything in a quart jar and let it steep for four weeks. Prepare a clean standard wine bottle by inserting 6 whole garlic cloves and a large sprig of each herb.
Strain the flavored vinegar through a coffee filter or several layers of cheesecloth and pour into the wine bottle. Seal with a cap or cork. Add a label and ribbon if desired.
