2 eggs
2 cups brown sugar
1 cup cooking oil
1 teaspoon vanilla
1 teaspoon cinnamon
1 teaspoon baking soda
2 cups flour
3 cups apples, unpeeled, cut in small pieces
1 cup coarsely chopped nuts
Preheat oven to 300 degrees. Grease a 9-by-13-inch baking dish.
In a large mixing bowl, combine eggs, sugar, oil and vanilla. Mix well. Measure flour into a small bowl and mix in cinnamon and baking soda. Combine dry ingredients with egg-sugar-oil mixture and mix until well blended. Stir in apples and nuts and pour into prepared pan.
Bake in preheated oven for 1 hour. Serve warm or cold, excellent with whipped cream. Makes 12 servings.
