Mashed Potato Casserole

4 1/2 cups mashed potatoes, made from Schramm's potatoes, cooled slightly
1 cup sour cream
2 large eggs
3 tablespoons chives
3/4 cup shredded Cheddar cheese

Heat oven to 375 degrees.

Mix mashed potatoes with sour cream, eggs, chives, salt and pepper. Spread in casserole and bake uncovered for 35 minutes. Sprinkle with Cheddar cheese and bake for another 10 minutes or until cheese has melted.

Tester's note: We used Chippewa white potatoes, which have such thin skins they didn't need to be peeled. Delicious.
