Black Bean Tortilla
2 cups cooked black beans (1 can, drained) 1 1/2 to 2 cups organic corn meal or masa harina 1/2 teaspoon salt 1 teaspoon baking powder 1 tablespoon oil 1 1/4 cups water (approximately)
Buzz beans in food processor or blender until puréed. Add dry ingredients. Add oil. Add water as needed until soft dough forms. Let rest for a few minutes. Roll thinly and cook on hot griddle until done.
