Focaccia or Pita Bread
3 cups combination of unbleached and whole-wheat flour 2 teaspoons yeast 1 tablespoon sugar 1 1/8 cups lukewarm water 1 tablespoon olive oil Optional: Fresh herbs and garlic
Combine dry ingredients. Add wet to dry ingredients. Knead 5 to 10 minutes. Cover and let sit 1 hour. Flatten into 6 to 8 pieces. Roll out thinly -- let rest 15 minutes. Bake on hot griddle until done (2 to 3 minutes per side).
