Herb Roasted Orange Salmon

2 tablespoons olive oil
1/4 cup fresh orange juice
Zest of 1 orange
2 teaspoons minced garlic
2 teaspoons dried tarragon
1/4 teaspoon salt
1/4 teaspoon pepper
4 8-ounce salmon fillets
2 teaspoons freshly chopped chives

In large bowl, whisk together olive oil, orange juice, zest, garlic, tarragon, salt and pepper. Add salmon and marinate for 1 hour at room temperature.

Preheat oven to 475 degrees. Place salmon skin-side down in glass baking dish. Pour marinade on top. Bake 7 to 10 minutes, until salmon flakes easily. Remove from oven. Sprinkle with fresh chives and serve.

Yield: 4 servings.
