Honey Bran Muffins
2/3 cup vegetable oil 1 cup honey 4 eggs 4 egg whites 1 1/4 cups buttermilk 1 cup brown sugar, packed 1 cup pastry flour 1 2/3 cups wheat bran 1 tablespoon baking soda 1 1/4 cups raisins or dried apricots
Combine oil, honey, eggs, egg whites and buttermilk and set aside.
Combine remaining ingredients. Gradually add wet mixture, mixing only to moisten. Don't overmix. Prepare muffin tins either by greasing lightly or lining with cupcake liners. Deposit 2 ounces (we used about 1/3 cup batter) per muffin. Bake at 400 degrees for 15 to 18 minutes or until done. Makes 12 to 15 muffins.
