Waldorf Relish
3 Granny Smith apples, cored, cut into 1/4-inch dice 4 tablespoons chopped chives 6 green onions, sliced thinly on bias 1 cup dried cranberries 3/4 cup chopped pecans
Vinaigrette: 1/4 cup cranberry juice 1 tablespoon raspberry vinegar 1 small clove garlic, finely minced 1/3 cup canola oil 2 to 3 drops Tabasco sauce Salt and pepper to taste
Combine apples, chives, green onions, cranberries and pecans. In separate small bowl, whisk together vinaigrette ingredients. Toss vinaigrette into apple mixture. Stir to coat thoroughly.
