Cucumbers are a traditional part of the kitchen garden. You need only two or three plants to keep you supplied with a harvest throughout the season. Ingredient amounts vary.
Cucumbers
Red Onions
Herbs
Rice wine vinegar
Seasoning
Thinly slice peeled or unpeeled cucumbers and minced red onions. Combine these in a bowl with dill, cilantro, basil, tarragon or a mixture. Sprinkle with salt and pepper and add rice wine vinegar. Mix well and refrigerate for at least an hour before serving.
