1/4 cup fat-free mayonnaise
1 tablespoon lime juice
4 8-inch round flour tortillas
2 cups fresh spinach leaves
1 medium red bell pepper, cut into strips
1 medium carrot, cut into strips
1/2 cup shredded low-fat cheese

In a small bowl, combine mayonnaise and lime juice. Spread each tortilla evenly with mayonnaise mixture. Arrange spinach leaves evenly on top of each tortilla, then bell pepper strips, carrots and cheese. Roll up tightly. (Low-fat or nonfat ranch dressing can be used in place of the mayonnaise mixture.) Makes 4 servings.

Nutritional analysis per serving: 235 calories; 7 grams fat.
