3 tomatoes, sliced
1 small red onion, sliced
1 roasted red pepper, sliced
Sliced black olives
1/2 cup fat-free Italian dressing
4 whole grain rolls, or Italian rolls
1/4 cup shredded mozzarella cheese
Preheat the broiler, Combine tomatoes, onion, red pepper and olives in a medium bowl. Add dressing; toss well. Spoon mixture onto rolls.
Place on a baking sheet. Sprinkle with mozzarella. Broil until cheese melts, about two minutes. Serve immediately or wrap in foil until serving time. Makes for servings.
