These can easily be eaten with little fingers.
3 tablespoons seasoned bread crumbs
1 tablespoon Parmesan cheese
1/8 teaspoon garlic powder
1/8 teaspoon paprika
1/8 teaspoon pepper
2 medium zucchinis
2 teaspoons vegetable oil
1 tablespoon water
vegetable cooking spray
Combine bread crumbs, Parmesan, garlic powder, paprika and pepper in a zip-top bag. Cut each zucchini lengthwise into four pieces; cut each piece in half crosswise. Place zucchini in a zip-top plastic bag; add oil and water. Shake. Place a few zucchini strips in bag with bread crumbs at a time; shake bag until coated. Place zucchini on a baking sheet coated with cooking spray. Bake at 475 degrees for 10 minutes or until brown and tender. Makes 4 servings.
