This recipe is listed under Rosh Hashana in the cookbook, but it works well anytime, including Passover.
1 4- to 5-pound chicken
1 orange
1 cup orange juice
1 teaspoon salt
1 teaspoon pepper
1 teaspoon ground ginger
1/4 cup honey
1/2 cup chicken broth
Preheat oven to 350 degrees. Clean and dry the chicken. Place in a roasting pan, breast side down.
Wash the orange in water and place it in the cavity of the chicken. Mix together the orange juice, salt, pepper and ginger, and pour the mixture over the chicken. Roast, uncovered, for 30 minutes.
Remove the chicken from the oven. Turn it over.
Using a spoon (I use a brush), smear the chicken with the honey.
Baste with juices from the pan. Return the chicken to the oven and roast 20 minutes more, or until the drumsticks remove easily. Serves 6 to 8.
