Founded in 1985, Don Pablo's is a chain of restaurants specializing in Tex-Mex, a type of regional cuisine originating in Texas that blends food products available in the United States and the culinary creations of Mexican-Americans influenced by the cuisines of Mexico.

Each restaurant is decorated to reflect its Mexian heritage with bright, cheery colors and thematic items gracing the walls.
